Pierogi Casserole

Ingredients
Serves 6
- 6 to 8 lasagna noodles
- 8 medium potatoes, peeled, coarsely chopped
- 1 1/2 cups shredded sharp Cheddar cheese, divided
- 8 tablespoons (1 stick) butter, divided
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large onions, sliced
- 1/2 cup grated Parmesan cheese
Directions

Cook noodles using package directions; drain. Rinse with cool water; drain again.

Combine potatoes and enough water to cover in a large saucepan. Cook until potatoes are tender, about 20 minutes; drain well.

Preheat the oven to 350ºF.

Combine potatoes, 1 cup Cheddar, 4 tablespoons butter, milk, salt and black pepper in a large bowl and mash until well mixed.

Sauté onions in remaining butter in a skillet, stirring continually, until onions are tender, about 5 minutes.

Place two-thirds of the onions in a 13 × 9-inch baking dish. Layer with half the noodles, the mashed potatoes, remaining onions and remaining noodles. Sprinkle with remaining Cheddar and the Parmesan. Bake, covered with foil, for 45 minutes.

Cottage cheese was one of Grandma's delicious additions she sometimes made to the potato mixture (and it helped feed an extra mouth or two). Grandma added up to 1 cup of cottage cheese when mashing the potato mixture, then proceeded as the recipe directs.
