Potluck Casserole

Ingredients
Serves 6
- 1 1/2 pounds ground beef
- 1 clove garlic, crushed
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon granulated sugar
- 1 (15-ounce) can plus 1 (8-ounce) can tomato sauce
- 9 lasagna noodles
- 1 1/2 cups sour cream
- 2 (3-ounce) packages cream cheese, softened
- 6 green onions, chopped
- 1/2 cup shredded Cheddar cheese
Directions

Place ground beef in a large skillet over medium-high heat. Cook until browned and crumbly, about 8 minutes; drain well.

Add garlic, salt, black pepper, granulated sugar and tomato sauce to ground beef in skillet and mix well. Reduce heat to low. Simmer, covered, for 15 minutes.

Cook noodles using package directions; drain. Rinse with cool water; drain again.

Preheat the oven to 350ºF.

Combine sour cream and cream cheese in a small bowl. Beat with an electric mixer set at medium speed until smooth and creamy.

Layer noodles, sour cream mixture, green onions and ground beef mixture one-third at a time in an 11 × 7-inch baking dish. Sprinkle with Cheddar. Bake until hot and bubbly, about 30 minutes. Serve immediately.

Grandma's Secret Trick
When Grandma didn't have sour cream on hand, she could still make Potluck Casserole. She just substituted 1 cup whole-milk plain yogurt, 1 cup small-curd cottage cheese or 1 cup ricotta cheese for the sour cream and proceeded as the recipe directs.
