Quick-Fix Spaghetti

Ingredients
Serves 4
- 3/4 pound spaghetti or angel hair pasta
- 1/4 cup olive oil
- 2/3 cup sliced natural almonds or pine nuts
- 3 garlic cloves, minced
- 2 tablespoons finely chopped parsley
Directions

Cook the spaghetti in boiling salted water until tender but firm, about 10 minutes.

Meanwhile, in a small skillet, warm the oil over medium heat. Add the almonds and cook, stirring frequently, until deep golden, 3 to 4 minutes. Add the garlic and cook, stirring, for 1 minute longer.

Drain the pasta; transfer to a serving bowl. Pour the almond-garlic mixture, parsley, 1 teaspoon of salt and 1/2 teaspoon of black pepper on top; toss well.
