Grandma knew this quick pasta was perfect for busy weeknight suppers.

Ingredients

Serves 6

  • 12 ounces spaghetti
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 large zucchini
  • 8 ounces hot italian sausage links
  • 1 (28-ounce) can crushed tomatoes, undrained, or pureed tomatoes
  • 1 (14 1/2-ounce) can stewed tomatoes, undrained
  • 1 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1/4 cup grated Parmesan cheese
Directions
  1. 1

Cook pasta according to package directions, omitting salt. Drain and set aside. Keep warm.

  2. 2

Place onion and garlic in small bowl; set aside. Cut zucchini into large chunks. Place in another small bowl. Cover and refrigerate until ready to use.

  3. 3

With tip of paring knife, carefully make a slit down the center of the sausage links. Peel back casings and crumble sausage into large saucepan, discarding casings. Add onion and garlic. Cook over medium heat until sausage is browned and crumbly, stirring occasionally; drain fat, if needed.

  4. 4

Add crushed tomatoes, stewed tomatoes, basil and red pepper flakes; bring to a simmer.

  5. 5

Stir in zucchini; return to a simmer. Cook, uncovered and stirring occasionally, until zucchini is tender and sauce thickens, about 15 minutes. Place cooked pasta on serving dish and top with meat sauce; sprinkle with Parmesan.

  6. 6

Variation: For a milder sauce, omit the red pepper flakes and substitute mild Italian sausage for the hot Italian sausage.

Grandma would always add 1 tablespoon of vegetable oil to boiling water to keep pasta from sticking together. She would also rub vegetable oil around the top of her pot to prevent any water from boiling over.
