Spinach & Cheese Pasta

Ingredients
Serves 4
- 1 (10-ounce) package frozen chopped spinach, thawed
- 1/2 cup hot water
- 1/3 cup cottage cheese
- 1/3 cup chopped fresh basil, or 2 tablespoons dried basil
- 2 1/2 tablespoons olive oil
- 2 tablespoons grated Parmesan cheese
- 2 cloves garlic, minced
- 8 ounces corkscrew pasta
Directions

Drain spinach and squeeze to remove excess moisture.

Combine spinach, hot water, cottage cheese, basil, olive oil, Parmesan and garlic in a blender. Process the mixture until smooth and creamy.

Cook pasta using package directions; drain well.

Place hot pasta in a large bowl. Add the cottage cheese mixture. Toss to mix well.

Grandma's Secret Tip
Spinach & Cheese Pasta is good hot or at room temperature, which made it ideal for Grandma to take along for potluck. When she wanted to serve it hot, she wrapped it with foil. To serve it at room temperature, she let the tossed pasta cool before covering it with plastic wrap to transport.
