Spinach Lasagna Roll-Ups

Serves 6
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 (14 1/2-ounce) can tomato sauce with italian seasonings
- 1/2 teaspoon oregano
- 6 lasagna noodles
- 1 (10-ounce) package frozen chopped spinach, thawed, drained
- 12 ounces cottage cheese
- 1 cup finely chopped onion
- 1 teaspoon garlic powder
- 1/2 cup grated Parmesan cheese

For sauce, heat olive oil in a medium skillet over medium-high heat until hot. Sauté garlic in hot olive oil for 2 minutes. Stir in tomato sauce and oregano. Simmer, stirring occasionally, for 7 minutes. Set aside.

For roll-ups, cook the noodles using package directions; drain well. Spread 1⁄2 cup sauce in an 11 3⁄4 x 7 1⁄2-inch baking dish. Preheat the oven to 350°F.

Press the excess moisture from the spinach. Combine the spinach, cottage cheese, onion and garlic powder in a large bowl; mix well. Spread equal portions of spinach mixture over each noodle. Roll up noodles, jelly roll fashion, and arrange in the prepared baking dish.

Spoon remaining sauce over roll-ups. Sprinkle with the Parmesan. Bake for 30 minutes.

grandma's secret
Rolling up a slightly firm noodle is easier than rolling up a very soft one. Sometimes Grandma deliberately undercooked the lasagna noodles, cooking them for about 8 minutes instead of the 13 minutes recommended on the package. When she baked the roll-ups, she covered the baking dish for the first 20 minutes so the noodles would finish cooking. Then she uncovered the dish for the last 10 minutes so the Parmesan could turn a nice crusty brown.
