Sweet Noodles with Ricotta

Ingredients
Serves 4
- 8 ounces wide egg noodles
- 1/2 cup ricotta cheese
- 1/3 cup milk
- 2 tablespoons granulated sugar
- 1/8 teaspoon cinnamon
Directions

Cook noodles using package directions; drain well. Keep warm.

Combine ricotta, milk, granulated sugar and cinnamon in a small saucepan.

Cook the ricotta mixture, stirring continually, until the mixture is smooth and heated through, about 3 minutes.

Combine noodles and ricotta mixture in a large bowl and toss to mix well. Serve warm.

Grandma's Secret Trick
Raisins go very well with the ricotta and sweet spice in this pudding, and since Grandma adored raisins, she often added them. She stirred in up to 1/2 cup raisins when she removed the ricotta mixture from the heat. For a plumper texture, she often soaked the raisins in water for 30 minutes before adding them.
