Turkey & Ziti Casserole

Grandma often cooked for a crowd of children, so she was glad to have this kid-pleasing recipe.

Ingredients

Serves 4 

  • 8 ounces ziti
  • 1 (28-ounce) jar spaghetti sauce
  • 1 1/2 cups chopped cooked turkey
  • 2 cups shredded mozzarella cheese, divided
  • 2 tablespoons grated Parmesan cheese
Directions

    Preheat the oven to 350ºF.

    Combine pasta with enough water to cover in a large saucepan. Bring to a boil over high heat. Boil for 11 minutes; drain. Rinse with cool water; drain again.

    Combine pasta, spaghetti sauce, turkey and 1 cup mozzarella in a large bowl and mix well. Spoon mixture into an 11 × 7-inch baking dish.

    Sprinkle with the Parmesan and the remaining mozzarella.

    Bake until casserole is hot and bubbly and cheese is melted, about 30 minutes.

Grandma's Secret Trick

Mushrooms add a little more flavor and texture to this dish, and they stretch the casserole to serve an extra person. Preparing them takes just a few extra minutes. Grandma sliced 8 ounces of clean button mushrooms, then sautéed them in butter until they were tender and most of the water evaporated from them. She added the mushrooms to the turkey mixture, then baked as directed.
