Chewy Cherry Cookies

Grandma knew I loved cherries so she created this cookie recipe just for me.

Grandma knew I loved cherries so she created this cookie recipe just for me.

Ingredients

Serves 100 

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cups granulated sugar
  • 1 cup (2 sticks) butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup ground pitted dried cherries
Directions

    Preheat the oven to 375ºF.

    Combine flour, baking soda and baking powder in a small bowl and mix well.

    Combine granulated sugar and butter in a large bowl. Beat with an electric mixer set at medium speed until light and fluffy. Beat in egg and vanilla extract.

    Add the flour mixture gradually, beating continually. Stir in cherries. Chill, covered, until firm, about 10 to 15 minutes.

    Shape dough into 1-inch balls. Arrange on baking sheets. Bake until golden, about 8 to 10 minutes.

    Cool cookies on baking sheets for 2 minutes. Transfer cookies to wire racks to cool completely.

Grandma's Secret Trick

When she had the time, Grandma made these Chewy Cherry Cookies even more delicious by topping them with a little sugar glaze. She combined 1 cup confectioners' sugar with 1 to 2 tablespoons milk, stirred the mixture until it was smooth, then drizzled it over the cookies. The glaze also helped the cookies remain fresh and soft for an extra day or two.
