Chocolate Almond Cookies

30 minutes“Leave it to Grandma to turn a good cookie into a delight by adding a little chocolate.”
Ingredients
Serves 60
- 3 egg whites
- 1 tablespoon white vinegar
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 5 (1-ounce) squares semisweet chocolate, divided
- 1 cup finely chopped blanched almonds
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 1/2 teaspoons water

Preheat the oven to 250ºF. Grease baking sheets.

Combine the egg whites, vinegar and salt in a medium bowl. Beat with an electric mixer set at medium speed until soft peaks form. Add granulated sugar gradually, beating until stiff peaks form.

Finely chop 4 squares of the chocolate. Stir the almonds, vanilla extract, almond extract, and chopped chocolate into egg white mixture. Drop the batter by teaspoonfuls onto the prepared baking sheets.

Bake until firm, about 30 minutes. Let stand to cool for 2 minutes. Transfer cookies to wire racks to cool completely.

Combine remaining chocolate and water in a double boiler. Cook over boiling water, stirring frequently, until chocolate is melted. Drizzle over cookies. Let stand to cool.

Grandma's Secret Trick
Grandma didn't generally fuss with fancy baking equipment, but one exception was the parchment baking paper she insisted on using to cover the baking sheets when baking these cookies. These cookies stick to baking sheets more than other cookies, and, to quote her, "you might lose half the cookies when they stick on the sheet." Parchment was simple to use and ensured that these cookies just slid off the sheet.
