Chocolate & Banana Softies

Ingredients
Serves 36
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 5 1/3 tablespoons butter, softened
- 1/3 cup granulated sugar
- 1/3 cup firmly packed light brown sugar
- 1 ripe medium banana, mashed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup milk chocolate chips
- 1/2 cup coarsely chopped walnuts, optional
Directions

Preheat oven to 375°F. Lightly grease baking sheets.

Place flour, baking powder and salt in small bowl; stir to blend well.

Beat the butter, granulated sugar and brown sugar in large bowl with electric mixer set at medium speed until light and fluffy. Beat in mashed banana, egg and vanilla extract. Stir in flour mixture. Beat until well blended. Stir in chocolate chips and walnuts, if desired. (Dough will be soft.)

Drop rounded teaspoonfuls of dough about 2 inches apart onto prepared baking sheets.

Bake until edges are golden, about 9 to 11 minutes. Let cookies stand on baking sheets for 2 minutes. Remove cookies to wire racks; cool completely.

Grandma's Secret Trick
Every so often Grandma would have more ripe bananas on her hands than she could use. Instead of tossing them out, ever-frugal Grandma peeled the bananas, cut them into chunks and froze them in freezer bags. She carefully labeled each bag with the number of bananas so she could easily thaw and mash the right amount for a recipe. The bananas discolored a bit, but this wasn't noticeable in baked goods.
