Chocolate Cherry Cookies

Ingredients

- 1 cup granulated sugar
- 8 tablespoons (1 stick) butter, softened
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt, divided
- 1/4 teaspoon each baking powder and baking soda
- 1 (16-ounce) jar maraschino cherries
- 1 cup semisweet chocolate chips
- 1/2 cup sweetened condensed milk

Preheat the oven to 350ºF.

Combine granulated sugar, butter, egg and vanilla in a large bowl. Beat with an electric mixer set at medium speed until mixture is creamy.

Add flour, cocoa, 1/4 teaspoon salt, baking powder and baking soda. Beat at low speed until a stiff dough forms.

Shape dough into 1-inch balls. Arrange 2 inches apart on baking sheets. Make a slight indentation in each ball, using thumb.

Drain the cherries, reserving 1 teaspoon juice. Place a cherry in each indentation.

Combine chocolate chips, condensed milk, reserved juice and remaining salt in a small saucepan. Cook over low heat, stirring continually, until smooth. Drizzle 1/2 teaspoon chocolate mixture over each cherry. Bake cookies until lightly browned, about 8 minutes. Cool cookies completely on wire racks.

Grandma's Secret Trick
If she forgot to soften the butter before starting to mix the cookies, Grandma put the butter in a microwave-safe bowl. She microwaved the butter on the DEFROST setting until it was soft enough to blend, about 10 seconds.
