Chocolate Chip Squares

Ingredients
Serves 9
- 3/4 cup (1 1/2 sticks) butter
- 3/4 cup granulated sugar, divided
- 1/2 cup firmly packed light brown sugar
- 3 large eggs, divided
- 1 1/2 teaspoons vanilla extract, divided
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups chocolate chips
- 1 (8-ounce) package cream cheese, softened
Directions

Preheat the oven to 350ºF.

Combine butter, 1/2 cup granulated sugar and brown sugar in a large bowl. Beat with an electric mixer until creamy. Beat in 2 eggs and 1/2 teaspoon vanilla extract. Stir in the flour, baking soda and salt. Fold in the chocolate chips.

Roll half the dough into an 8 × 8-inch square on a lightly floured surface. Press onto the bottom of an 8 × 8-inch baking pan.

Combine cream cheese, remaining granulated sugar, remaining egg and remaining vanilla extract in a medium bowl. Beat until smooth and creamy.

Spread cream cheese mixture over cookie dough layer. Roll the remaining cookie dough into an 8 × 8-inch square on a lightly floured surface. Place on top of cream cheese mixture. Bake for 30 minutes.

Grandma's Secret Trick
For the quickest, cleanest rolling, Grandma rolled out the chocolate chip cookie dough between two sheets of waxed paper. Sometimes she used a rolling pin cover, which is like a little sleeve for the rolling pin, and it worked beautifully, too.
