Chocolate Raspberry Cookies

Ingredients

  • 1/2 cup firmly packed light brown sugar
  • 1/3 cup granulated sugar
  • 4 tablespoons butter, softened
  • 1/4 cup cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3/4 cup raspberry-flavored chocolate chips or milk chocolate chips

Directions

    Preheat the oven to 350°F. Spray 3 nonstick baking sheets with nonstick cooking spray.

    Combine brown sugar, granulated sugar, butter, cream cheese and vanilla extract in a large bowl. Beat with an electric mixer set at high speed until creamy.

    Sift flour, cocoa and salt together in a small bowl. Add to creamed mixture and mix well. Stir in the raspberry chips.

    Shape by rounded tablespoonfuls into balls. Arrange 2 inches apart on the prepared baking sheets.

    Flatten balls with the bottom of a glass into 2-inch circles.

    Bake until slightly puffy and soft to the touch, about 8 minutes. Cool on the baking sheets for 1 minute; remove to wire racks to cool completely.

Grandma's Secret Trick

Because this cookie dough contains no eggs, it makes a safe and fantastic addition to homemade vanilla or chocolate ice cream. Grandma pinched off bits of the dough and added them to the ice-cream maker when the ice cream was slightly frozen but not too stiff. She restarted the ice-cream maker's motor and continued to freeze the ice cream according to the manufacturer's directions.
