Chocolate Sandwich Cookies

Ingredients
Serves 24
- 3 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 3 teaspoons baking powder
- 3/4 teaspoon plus 1/8 teaspoon salt, divided
- 1 1/2 cups milk
- 2 large eggs
- 3 teaspoons vanilla extract, divided
- 3/4 cup vegetable shortening
- 2 cups confectioners' sugar
- 1 (7-ounce) jar marshmallow crème
- 3/4 cup (1 1/2 sticks) butter, softened

Preheat the oven to 400ºF.

For cookies, combine flour, granulated sugar, cocoa, baking powder and 3/4 teaspoon salt in a large bowl and mix well. Stir in milk, eggs and 1 1/2 teaspoons vanilla extract.

Add shortening to flour mixture and beat with an electric mixer set at medium speed until smooth.

Drop by rounded tablespoonfuls onto baking sheets. Bake for 7 to 8 minutes. Transfer to wire racks to cool completely.

For filling, combine confectioners' sugar, marshmallow crème, butter, remaining vanilla extract and remaining salt in a medium bowl. Beat until light and fluffy. Spread equal portions of filling on flat side of half the cookies. Top with remaining cookies.

Grandma's Secret Trick
Grandma liked to be creative with the filling for these cookies. She varied the flavor with a little orange extract, walnut flavoring or mint extract. For a double-chocolate cookie, she added 2 teaspoons of cocoa powder to the filling mixture.
