Congo Bars

Ingredients
Serves 24
- 2 3/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 1/4 cups firmly packed light brown sugar
- 1/2 cup plus 2 tablespoons (1 1/4 sticks) butter, melted
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 1 cup chopped pecans
- 1 (6-ounce) package milk chocolate chips
Directions

Preheat the oven to 350ºF. Grease and flour a 13 × 9-inch baking pan.

Sift flour, baking powder and salt into a medium bowl.

Combine brown sugar and melted butter in a large bowl. Beat with an electric mixer set at medium speed until blended. Beat in eggs. Stir in vanilla extract.

Add flour mixture to brown sugar mixture and mix well. Add pecans and chocolate chips and mix well.

Spoon into prepared baking pan. Bake until golden and set, 25 to 35 minutes.

Grandma's Secret Trick
Grandma loved the flavor of dark brown sugar in this cookie, so she sometimes substituted it for the light brown sugar. For a slight flavor change and extra chewiness, she added 1/2 cup shredded coconut to the batter with the chocolate chips and pecans.
