Grandma often surprised us with Crispy Rice Shapes in our school lunchboxes. What a treat!

Ingredients

Serves 12 

  • 2 1/2 tablespoons butter
  • 1 (10 1/2-ounce) package marshmallows
  • 6 1/2 cups crisp rice cereal
  • 1 (12-ounce) package semisweet chocolate chips
Directions

    Spray a 13 × 9-inch dish with nonstick cooking spray.

    Melt butter in a large nonstick saucepan over medium-low heat. Add the marshmallows and cook, stirring continually, until melted.

    Combine cereal and marshmallow mixture in a large bowl and mix well. Spoon into the prepared dish.

    Let mixture stand for 20 minutes. Cut as desired with cookie cutters.

    Melt chocolate chips in a microwave-safe bowl using package directions. Dip cookies halfway into the melted chocolate or decorate with chocolate as desired. Arrange on waxed paper. Let stand to cool until chocolate is set, about 40 minutes.
