Ingredients

Serves 24

  • 1 cup chopped dates
  • 1/2 cup water
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 8 tablespoons (1 stick) butter, softened
  • 1/2 cup firmly packed dark brown sugar
  • 1 large egg
  • 2 teaspoons rum extract
  • 1/2 cup walnut pieces, chopped
Directions
  1. 1

Soak dates in water in small bowl at least 30 minutes or up to 2 hours.

  2. 2

Preheat oven to 350°F. Lightly grease baking sheets. Combine flour, baking powder and salt in medium bowl.

  3. 3

Beat butter in large bowl with electric mixer set at medium speed until smooth. Gradually beat in brown sugar; increase speed to high and beat until light and fluffy. Beat in egg and rum extract until fluffy. Gradually stir in flour mixture alternately with date mixture, mixing just until combined. Stir in walnuts until blended.

  4. 4

Drop level tablespoonfuls of dough about 11/2 inches apart onto prepared baking sheets. Bake until just set, about 14 minutes. Transfer to wire racks to cool completely. Store in airtight container.

Grandma's Secret Trick

Grandma's Secret Trick

Because different sugars affect the texture of cookies, Grandma kept a variety on hand. She knew that cookies made with granulated sugar turn crisp and hard when they stand, and those made with brown sugar turn soft as they begin to cool. She also told us that sugar, no matter what kind, can be stored indefinitely as long as it is kept in a cool, dry place.
