Fabulous Blonde Brownies

Ingredients

Serves 36 

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup blanched whole almonds, coarsely chopped
  • 1 cup toffee baking pieces
  • 2/3 cup (1 stick plus 2 1/3 tablespoons) butter, softened
  • 1 1/2 cups firmly packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
Directions

    Preheat oven to 350°F. Lightly grease a 13 × 9-inch baking pan.

    Combine flour, baking powder and salt in a small bowl; mix well.

    Combine white chocolate chips, almonds and toffee pieces in a medium bowl; mix well.

    Beat butter and brown sugar in a large bowl with electric mixer set at medium speed until light and fluffy. Beat in eggs and vanilla. Add flour mixture; beat at low speed until well blended. Stir in 3/4 cup white chocolate chip mixture. Spread evenly in prepared pan.

    Bake 20 minutes. Immediately sprinkle remaining white chocolate chip mixture evenly over brownies. Press lightly. Bake until toothpick inserted in center comes out clean, about 15 to 20 minutes. Cool brownies completely in pan on wire rack. Cut into 2 x 1 1/2-inch bars.

Grandma's Secret Trick

Despite her age, Grandma was anything but square, especially when it came to cutting bar cookies. For a different look, she often cut them into diamond shapes. Grandma used a sharp knife to cut straight lines down the length of the pan. Then she cut more straight lines the same width apart diagonally across the pan to form diamonds.
