Festive Mincemeat Squares

Ingredients
Serves 24
- 1 1/2 cups all purpose flour
- 3 tablespoons confectioners' sugar
- 1 1/3 cups (2 2/3 sticks) butter, divided
- 1/2 cup firmly packed light brown sugar
- 2 large eggs
- 1 1/2 cups rum flavored mincemeat
- 1 cup shredded coconut
- 1/2 cup dried red cherries
- 1/3 cup chopped walnuts
Directions

Preheat oven to 350°F. Grease a 13 x 9-inch baking pan lightly.

Combine flour and confectioners’ sugar in a large bowl and mix well. Cut in 1 cup butter with a pastry blender until crumbly. Pat crumb mixture over bottom of prepared baking pan. Bake for 10 minutes. Cool in the pan on a wire rack.

Combine remaining butter and brown sugar in a medium bowl. Beat with an electric mixer set at high speed until light and fluffy. Add eggs and beat until blended. Stir in mincemeat, coconut, cherries and walnuts.

Spread mincemeat mixture evenly over baked layer. Bake until golden brown, about 20 to 25 minutes. Cool in pan on a wire rack. Cut into squares.

Grandma's Secret Trick
A little lemon glaze makes these good cookies even better, Grandma learned. She sifted 1 1/2 cups confectioners' sugar into a medium bowl, then added 2 to 3 tablespoons lemon juice and 1 teaspoon vanilla extract and stirred until smooth. She drizzled the glaze over the squares while they were still warm.
