Football Cookies

Ingredients
Serves 30
- 1 package (10 ounces) peanut butter flavored chips
- 1 cup (2 sticks) butter, softened
- 1/2 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 1 egg
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 cup prepared chocolate frosting
- 1 tube (.68 ounce) white decorating gel
- Orange food coloring
- 1 teaspoon vegetable oil
Directions

Place 1 cup of the peanut butter chips in a microwave-safe bowl and microwave on HIGH until melted, about 1 minute. Using an electric mixer set on high, beat the melted chips, butter, granulated sugar and brown sugar until just combined. On low speed, add the egg and vanilla. Stir in the flour until a dough forms. Divide the dough in half; wrap in plastic wrap and chill for 30 minutes.

Preheat the oven to 375F. On a lightly floured surface, roll the dough to a 1/4-inch thickness. Using a football-shaped cutter (or a sharp knife), cut out football shapes. Place the shapes on ungreased baking sheets. Bake until the cookies are set, 10 to 12 minutes. let the cookies stand on baking sheets for 2 minutes; transfer to wire racks to cool completely.

Spread each cookie with about 1 1/2 teaspoons frosting. Gently dab the cookies with a paper towel to create a dimpled look.

Using the white gel, pipe lace details on the cookies.

Place the remaining peanut butter chips in a microwave-safe bowl and microwave on HIGH until melted, about 1 minute; stir in a few drops of food coloring and the oil. Place the mixture in a pastry bag fitted with a plain tip; pipe orange strips on the cookies. Let cookies set, about 30 minutes.

Grandma's Secret Tip
When creating the dimpled look on the cookies, Grandma pressed the paper towel lightly into the frosting. If she pressed too hard, the frosting would stick to the towel. If she was unhappy with the effect, she simply smoothed the frosting with a small spatula and tried again.
