Frosted Pineapple Bars

For a super way to save money, purchase the grocery store's brand of canned pineapple. It is often about half the price of the nationally advertised brands while still just as tasty.

For a super way to save money, purchase the grocery store's brand of canned pineapple. It is often about half the price of the nationally advertised brands while still just as tasty.

Ingredients

Serves 24 

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 eggs, beaten
  • 1 (20-ounce) can crushed pineapple, reserve 2 teaspoons juice for frosting
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3 ounces cream cheese, softened
  • 3 tablespoons butter or margarine
  • 1 3/4 cups confectioners' sugar
  • 1/4 cup slivered almonds
Directions

    Preheat oven to 350°F. Grease a medium baking pan. Combine flour, sugar, eggs, undrained pineapple, baking powder and vanilla in a large bowl; mix well.

    Pour batter into prepared baking pan. Bake until a toothpick inserted in center comes out clean, about 35 minutes. Let cake cool about 20 minutes before frosting.

    Meanwhile, beat cream cheese, butter, pineapple juice and confectioners' sugar in a medium bowl with an electric mixer set at medium speed until fluffy, about 2 minutes.

    Spread frosting over cooled cake. Sprinkle almonds over top. Cut into bars.
