Fruity Oat Squares

Ingredients
Serves 16
- 1 cup all-purpose flour
- 1 cup uncooked quick-cooking oats
- 3/4 cup firmly packed light brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 5 1/3 tablespoons butter, melted
- 3/4 cup apricot, cherry or other fruit flavor preserves
Directions

Preheat oven to 350°F. Spray 9-inch square baking pan with nonstick cooking spray; set aside.

Combine the flour, oats, brown sugar, baking soda, salt and cinnamon in medium bowl; mix well. Add melted butter; stir with a fork until mixture is crumbly. Reserve about 3/4 cup crumb mixture for topping.

Press remaining crumb mixture evenly onto bottom of prepared pan. Bake until lightly browned, 5 to 7 minutes. Spread preserves over crust; top with reserved crumb mixture.

Bake until golden, 20 to 25 minutes. Cool completely in pan on wire rack. Cut into 16 squares.

Grandma's Secret Trick
Dressing up everyday desserts for company was one of Grandma's special talents. To add a pretty look to these cookie squares, she pulled out her sieve, added some confectioners' sugar and shook a delicate sugar snowfall over the surface just before serving. If she had a little more time, she drizzled the top with melted chocolate zigzags for the crowning touch.
