Fruity Sandwich Cookies

Ingredients

  • 3 cups plus 1 tablespoon all-purpose flour, divided
  • 2 teaspoons baking soda
  • 1 cup firmly packed light brown sugar
  • 1/2 cup shortening
  • 6 tablespoons dark corn syrup
  • 4 tablespoons butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups raisins, chopped
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 unpeeled medium orange, cut into eighths and seeded

Directions

    Preheat oven to 350°F. Mix 3 cups flour and the baking soda in a medium bowl.

    Combine brown sugar, shortening, corn syrup, butter, eggs and vanilla in a large bowl. Beat at high speed until light and fluffy. Stir in dry ingredients.

    Roll cookie dough 1/4 inch thick on a lightly floured surface. Cut with a 11/2-inch round cookie cutter.

    Arrange the cookies 2 inches apart on baking sheets. Bake for 11 minutes. Cool for 2 minutes. Remove cookies from baking sheets to wire racks to cool completely.

    Combine raisins, granulated sugar, water and orange in a blender container. Process until finely minced. Pour into a medium saucepan. Stir in remaining flour.

    Cook over medium heat, stirring continually, until thickened. Let stand until cool. Spread raisin mixture over half the cookies. Top with the remaining cookies.

Grandma's Secret Trick

To keep her raisins fresh, Grandma stored them in the refrigerator. When she made these cookies, she wanted the raisins to be separated rather than in clumps so she could get an accurate measurement. She found a quick solution. She placed the raisins in a strainer and sprayed them with hot running water before measuring.
