Golden Coconut Bars

Ingredients
Serves 16
- 1 cup plus 2 tablespoons sifted all-purpose flour, divided
- 1 1/2 cups firmly packed light brown sugar, divided
- 1/2 cup shortening
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1 cup shredded unsweetened coconut
Directions

Preheat the oven to 325°F.

Combine 1 cup flour and 1/2 cup brown sugar in a medium bowl and mix well. Cut in shortening with a pastry blender until mixture is crumbly. Press on the bottom of a 12 × 8-inch baking dish. Bake for 20 minutes.

Combine remaining brown sugar, eggs, remaining flour, vanilla extract, baking powder and salt in a medium bowl. Beat with an electric mixer set at medium speed until well blended.

Pour mixture on top of the baked layer. Sprinkle with the coconut.

Bake until browned, about 25 minutes. Cut into bars while still warm.

Grandma's Secret Trick
When she was out of brown sugar, Grandma had a tried-and-true substitution. To substitute between 1 and 2 cups of brown sugar, she used 1/4 cup less granulated sugar and made up the difference with molasses. For this recipe in particular, she substituted an equal amount of granulated sugar in the crust, then substituted 3/4 cup granulated sugar and 1/4 cup molasses in the filling.
