Iced Apricot Jewels

Ingredients

- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 8 tablespoons (1 stick) butter
- 1 (3-ounce) package cream cheese
- 1/2 cup shredded unsweetened coconut
- 3/4 cup apricot preserves, divided
- 1 cup confectioners' sugar
- 1 tablespoon butter, softened
Directions

Preheat the oven to 350ºF. Grease baking sheets.

Sift the flour, granulated sugar, baking powder and salt into a large bowl. Cut in 8 tablespoons butter and cream cheese until a dough begins to form.

Add coconut and 1/2 cup apricot preserves and mix well. Drop by teaspoonfuls onto the prepared baking sheets. Bake until lightly browned, about 15 to 18 minutes.

Cool cookies on baking sheets for 2 minutes. Transfer cookies to wire racks to cool completely.

Combine remaining apricot preserves, confectioners' sugar and softened butter in a medium bowl. Beat with an electric mixer set at medium speed until well blended. Spread frosting on top of cookies.

Grandma's Secret Trick
Storing iced cookies can present a challenge, because any covering laid on top of the icing can pull it off. Grandma arranged the cookies in single layers on paper plates, then poked toothpicks into three cookies around the edge of the plate. Then she carefully lowered plastic wrap over the plate and tucked it underneath the plate. The toothpicks prevented the plastic wrap from touching the icing.
