Lollipop Swirl Cookies

Ingredients

- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 8–10 drops food coloring
- 48 pretzel sticks (3-inch)
Directions

Combine the flour, baking powder and salt in a medium bowl. Place the butter in another medium bowl. Beat with an electric mixer set on high speed until creamy, about 30 seconds. Gradually add the sugar, beating until combined, about 1 minute longer. Add the egg and vanilla. Beat well. Gradually beat in the flour mixture until a soft dough forms, about 30 seconds more.

Divide the dough in half. Add the food coloring to half of the dough. Beat until well blended, about 30 seconds. Refrigerate the dough until firm, about 30 minutes.

Roll each half of the dough into a 14- x 6-inch rectangle on waxed paper. Carefully invert the colored dough on top of the plain dough. Remove the waxed paper from the colored dough. Trim the dough to fit, if needed. Carefully roll the dough up starting at the long edge. Refrigerate until firm, about 1 hour.

Preheat oven to 375°F. Cut the dough into 1/4-inch-thick slices. Place the slices on ungreased baking sheets. Insert 1 pretzel stick into each slice, pressing lightly. Bake until the edges are lightly golden, 9–12 minutes. Cool for 2 minutes on the baking sheets, then transfer to a wire rack to cool completely.
