Oatmeal Raisin Cookies

Oatmeal Raisin Cookies

Ingredients

  • 3/4 cup raisins
  • 3 tablespoons orange juice
  • 3/4 cup granulated sugar
  • 8 tablespoons (1 stick) butter, softened
  • 1 large egg
  • 2 teaspoons grated orange zest
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 cups rolled oats
  • 1 1/2 cups white chocolate chips

Directions

    Combine raisins and orange juice in a small bowl. Let stand for 10 minutes.

    Preheat the oven to 350ºF. Grease 4 baking sheets.

    Combine granulated sugar and butter in a large bowl. Beat with an electric mixer set at high speed until light and fluffy. Beat in egg and orange zest.

    Mix flour and baking soda in a small bowl. Add to butter mixture and mix well. Add raisin mixture, oats and white chocolate chips and mix well.

    Drop the dough by rounded teaspoonfuls 2 inches apart onto the prepared baking sheets. Flatten with a fork.

    Bake until golden, about 8 minutes. Cool cookies on baking sheets for 1 minute. Remove to wire racks to cool completely.

What good is it to make delicious homemade cookies if you break them removing them from the baking sheets? Grandma's secret for getting cookies off the baking sheets whole was to let them cool on the sheet for just a minute, then remove them promptly. The brief cooling time gave the cookies time to get firm without giving them time to stick to the baking sheet.
