Peanut Butter Cookies

Ingredients
Serves 36
- 1 cup chunky or creamy peanut butter
- 1 cup vegetable shortening
- 1 cup granulated sugar
- 1 cup firmly packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup chopped salted peanuts (optional)

Preheat oven to 375ºF. Combine the peanut butter, shortening, granulated and brown sugars, eggs and vanilla in a large bowl. Beat with an electric mixer set on medium speed until blended, about 2 minutes. Add the flour and salt. Beat with the mixer on low speed, about 1 minute. Stir in peanuts, if desired.

Shape the dough into 1-inch balls and place on ungreased baking sheets. Flatten the balls in a criss-cross pattern using a fork dipped in granulated sugar.

Bake the cookies until golden and set, 8-10 minutes. Cool the cookies on the baking sheets for about 1 minute. Transfer the cookies to wire racks to cool completely.

To give these cookies a healthful boost, Grandma simply substitutes 1/2 cup whole-wheat flour for 1/2 cup of the all-purpose flour. Even better, she always serves them with a tall glass of cold milk!
