Peanut Butter Cup Cookies

Ingredients
Serves 72
- 1 cup (2 sticks) butter, softened
- 3/4 cup creamy peanut butter
- 3/4 cup granulated sugar
- 3/4 cup firmly packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/3 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 cup semisweet chocolate chips
- 1 cup peanut butter chips
- 10 peanut butter cups, cut into eighths

Preheat the oven to 350ºF.

Combine butter, peanut butter, granulated sugar and brown sugar in a large bowl. Beat with an electric mixer set at medium speed until smooth and creamy. Beat in the eggs and vanilla extract.

Combine flour, cocoa and baking soda in a small bowl and mix well. Add to creamed mixture and mix well.

Fold in chocolate chips, peanut butter chips and peanut butter cups.

Drop by rounded tablespoonfuls onto baking sheets. Bake until lightly browned, about 8 to 10 minutes. Cool on baking sheets for 2 minutes. Transfer cookies to wire racks to cool completely.

Grandma's Secret Trick
To cut the peanut butter cups without their crumbling, Grandma turned each cup upside down, so the larger side was resting on the cutting board. She then used a large, sharp chef's knife to cut easily through the candy.
