Peanut Crunch Bars

Ingredients
Serves 24
- 1 1/2 cups sugar
- 1 3/4 cups light corn syrup
- 1 1/2 cups peanut butter
- 8 cups crisped rice cereal
- 1 cup butterscotch chips
- 1 1/2 cups semisweet chocolate chips
Directions

Lightly spray a 13x9-inch pan with nonstick cooking spray. Place the sugar and corn syrup in a large saucepan. Bring to a boil over medium heat. Add the peanut butter.

Cook, stirring constantly, until combined, 1 to 2 minutes. Remove from heat. Stir in the cereal and butterscotch chips until well combined and the chips are completely melted.

Spread the mixture evenly in the prepared pan. Heat the chocolate chips in a double boiler over low heat, stirring frequently, until melted, 2 to 3 minutes.

Spread the melted chocolate over the mixture in the pan. Refrigerate until the chocolate is set, about 1 hour. Cut into 24 bars to serve.
