Pumpkin Cheesecake Bars

Ingredients

Serves 48 

  • 1 (16-ounce) package pound cake mix
  • 3 large eggs, divided
  • 2 tablespoons butter, melted
  • 4 teaspoons pumpkin pie spice, divided
  • 1 (8-ounce) package cream cheese, softened
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (16-ounce) can pumpkin puree
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans
Directions

    Preheat the oven to 350ºF.

    Combine cake mix, 1 egg, butter and 2 teaspoons pumpkin pie spice and stir until mixture is crumbly. Press onto bottom of a nonstick 15 × 10-inch baking pan.

    Place cream cheese in a large bowl. Beat with an electric mixer set at medium speed until fluffy. Add the sweetened condensed milk and beat until mixture is smooth.

    Add remaining eggs, remaining pumpkin pie spice, pumpkin puree and salt and beat well. Pour evenly over the cake mix layer.

    Sprinkle with the walnuts. Bake until center is set, about 30 to 35 minutes. Cool in pan on a wire rack. Chill, covered, for 2 hours. Cut into bars. Refrigerate any remaining bars.

Grandma's Secret Tip

When Grandma wanted a mousselike dessert with a crumb topping, she simply reversed the layers of this bar cookie. After pouring the pumpkin mixture into a well-greased baking pan, she crumbled the cake mix mixture on the top, then baked as directed. She checked whether it was set in the center, and, if not, she baked it for 10 minutes longer. She let it cool, then chilled the dessert and spooned it into dessert cups.
