Shortbread Walnut Brownies

Ingredients
Serves 52
- 2 cups all-purpose flour
- 1 cup (2 sticks) butter, softened
- 1/2 cup confectioners' sugar
- 2 teaspoons vanilla extract, divided
- 2 cups semisweet chocolate chips
- 1/4 cup granulated sugar
- 2 large eggs, beaten
- 1/8 teaspoon salt
- 1 cup chopped walnuts
Directions

Preheat the oven to 350ºF. Spray a 15 × 10-inch baking pan with nonstick cooking spray.

Combine the flour, butter, confectioners' sugar and 1 teaspoon vanilla extract in a food processor. Process until dough is well mixed.

Spread the dough evenly in prepared baking pan. Bake until lightly browned, about 15 minutes.

Place the chocolate chips in a microwave-safe dish. Microwave on HIGH, stirring once, until melted, about 11/2 to 2 minutes. Let stand to cool slightly.

Add granulated sugar, eggs, remaining vanilla extract and the salt to chocolate mixture and beat with a fork until well mixed. Stir in walnuts. Spread over the baked layer. Bake brownies until set, about 10 minutes. Cool completely in pan on a wire rack. Cut into bars.

Grandma's Secret Trick
Sometimes Grandma lined the baking pan with foil instead of using nonstick cooking spray. She left plenty of foil overhanging each end to use as "handles" to get the brownies out of the pan. She let the brownies cool in the pan for 2 minutes, then lifted them out, using the foil handles, and placed them on a wire rack to finish cooling.
