Ingredients

Serves 54 

  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 8 tablespoons (1 stick) butter, melted
  • 2 1/2 cups all purpose flour
  • 1/2 cup plus 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 1/4 cups confectioners' sugar
Directions

    Combine granulated sugar, eggs and vanilla extract in a large bowl. Beat with an electric mixer set at high speed until blended. Add butter and mix well.

    Sift flour, cocoa, baking powder and salt into a medium bowl. Add flour mixture to sugar mixture and mix well. Stir in pecans.

    Chill, covered, until the dough is firm, about 2 hours.

    Preheat the oven to 350°F.

    Shape dough into 1-inch balls. Roll in confectioners’ sugar. Arrange 2 inches apart on baking sheets.

    Bake until browned, about 10 minutes. Do not overbake; cookies should be chewy.

grandma's secret

Although she was concerned about economy, Grandma insisted on using real butter for these cookies. She said butter was what made the cookies chewy. Margarine works fine, she said, but for a chewy texture and a cookie that melts in the mouth, it was butter for Grandma.
