Strawberry Oat Squares

Ingredients
Serves 12
- 1 package (about 18 ounces) yellow cake mix, divided
- 3 tablespoons uncooked old-fashioned oats
- 1 tablespoon butter
- 1 1/2 cups sliced strawberries
- 3/4 cup plus 2 tablespoons water, divided
- 3/4 cup diced strawberries
- 3 egg whites
- 1/3 cup unsweetened applesauce
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg

Preheat the oven to 350°F. Spray 13 x 9-inch baking pan with nonstick cooking spray; lightly coat pan with flour.

Combine 1/2 cup cake mix and oats in small bowl. Cut in butter with a pastry blender until mixture resembles coarse crumbs; set aside.

Place sliced strawberries and 2 tablespoons water in blender or food processor. Process until smooth. Transfer to small bowl; stir in diced strawberries. Set aside.

Place remaining cake mix in large bowl. Add 3/4 cup water, egg whites, applesauce, cinnamon and nutmeg. Beat with an electric mixer set at low speed, just until moistened, about 30 seconds. Beat at medium speed for 2 minutes. Pour batter into prepared pan.

Spoon strawberry mixture evenly over batter, spreading lightly. Sprinkle evenly with oat mixture. Bake until toothpick inserted in center of pan comes out clean, 31 to 34 minutes. Cool completely in pan on wire rack. Cut into squares or bars.

Grandma liked to use oats in her baking recipes because they are so nutritious and add a delicious flavor. If she did not have old-fashioned oats in the cupboard, Grandma would substitute quick-cooking oats since these two products are interchangeable in baking recipes.
