Prep time:
10 mins.Cook time:
5 minutes“This was Grandma's go-to salad recipe. I can't even count how many times she whipped this up for us when we would stop by for lunch. ”
Ingredients
Serves 8
- 4 strips smoked bacon
- 3 tablespoons olive oil
- 2 teaspoons walnut oil
- 2 teaspoons white-wine vinegar
- 11/2 teaspoon Dijon-style mustard
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 6 cups (about 6 ounces) baby spinach leaves
- 4 ripe tomatoes, cut into wedges
Directions
1
Cook the bacon in a medium skillet over medium heat until crisp, about 5 minutes. Drain on paper towels and allow to cool slightly.
2
Meanwhile, whisk the olive oil, walnut oil, vinegar and mustard in a small bowl. Add the salt and pepper. Set aside.
3
Discard any soft spinach leaves and trim off any tough stalks. Place the spinach in a large serving bowl and add the tomato wedges. Drizzle with the dressing, then toss to coat. Crumble the bacon on top and serve.

For a richer taste, replace the walnut oil in the dressing with an equal amount of sesame oil in Step 2.
Serving Suggestion
Serving Suggestion
This salad tastes great paired with grilled steak—the saltiness of the bacon complements the steak’s meaty flavor.
