Bacon Spinach Salad

This was Grandma's go-to salad recipe. I can't even count how many times she whipped this up for us when we would stop by for lunch.

Ingredients

Serves 8 

  • 4 strips smoked bacon
  • 3 tablespoons olive oil
  • 2 teaspoons walnut oil
  • 2 teaspoons white-wine vinegar
  • 11/2 teaspoon Dijon-style mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 6 cups (about 6 ounces) baby spinach leaves
  • 4 ripe tomatoes, cut into wedges
Directions

    Cook the bacon in a medium skillet over medium heat until crisp, about 5 minutes. Drain on paper towels and allow to cool slightly.

    Meanwhile, whisk the olive oil, walnut oil, vinegar and mustard in a small bowl. Add the salt and pepper. Set aside.

    Discard any soft spinach leaves and trim off any tough stalks. Place the spinach in a large serving bowl and add the tomato wedges. Drizzle with the dressing, then toss to coat. Crumble the bacon on top and serve.
