Barbecue Chicken Salad

Ingredients
Serves 4
- 1 teaspoon vegetable oil
- 6 strips bacon
- 1 avocado
- 1 red bell pepper
- 4 green onions
- 1 cooked whole chicken (about 3 pounds
- 1/4 cup plus 2 tablespoons mayonnaise
- 2 tablespoons barbecue sauce
- 1/4 cup light cream
- 1/8 teaspoons salt
- 1/8 teaspoons black pepper
- 4 to 6 leaves iceberg lettuce
Directions

Heat the oil in a large skillet. Add the bacon and cook until crisp, about 5 minutes. Let cool, then chop.

Peel and pit the avocado, then chop the flesh. Deseed and chop the bell pepper. Trim and chop the onions. Remove the skin and bones from the chicken and dice the meat. Place the chicken, avocado, bell pepper and onions in a large bowl. Add the bacon.

Combine the mayonnaise, barbecue sauce, cream, salt and black pepper in amedium bowl.

Add the dressing to the chicken mixture and mix gently until all the ingredients are lightly coated. Line a serving bowl with the lettuce leaves. Place the chicken mixture in the center and serve.

For a lower-fat version of this salad, Grandma replaced the bacon with chopped green apple and used reduced-fat mayonnaise or plain yogurt for the dressing.
