Beef & Blue Cheese Salad

Ingredients
Serves 4
- 4 ounces sliced rare deli roast beef
- 1 large tomato or 8 large cherry tomatoes, cut in half
- 1 (10-ounce) package mixed green lettuce leaves
- 1/2 cup crumbled blue cheese or Gorgonzola cheese (about 2 ounces)
- 1 cup croutons
- 1/2 cup prepared Caesar or Italian salad dressing

Cut roast beef into thin strips; set aside.

Cut tomato crosswise in half. Remove stem. Gently squeeze tomato over small bowl to remove seeds; discard seeds. Coarsely chop tomato.

For salad, in a large serving bowl, combine mixed green lettuce leaves, roast beef strips, chopped tomato, crumbled blue cheese and croutons. Toss lettuce mixture gently to combine.

Drizzle salad with prepared dressing; toss to coat well.

Golden homemade croutons made all of Grandma's salads special. First, she cut Italian bread into 1/2-inch cubes to measure 1 cup. Then she melted 3 tablespoons butter over medium heat in her 10-inch cast-iron skillet. Grandma tossed the bread cubes in the butter to coat. She cooked them for about 12 minutes or until they were toasty brown, tossing them frequently. Sometimes she added seasonings to the butter, like minced fresh garlic or herbs. Grandma let the croutons cool on paper towels before using them.
