Classic Caesar Salad

Ingredients
Serves 4
- 3 tablespoons sunflower oil
- 2 cloves garlic, halved
- 2 thick slices white bread, crusts removed, cubed
- 1 head romaine lettuce
- 3 ounces Parmesan cheese
- 1 tablespoon Dijon-style mustard
- 2 teaspoons Worcestershire sauce
- 2 teaspoons lemon juice
- 1/4 cup olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
Directions

Heat the sunflower oil in a medium skillet over medium heat. Sauté 1 clove garlic and the bread cubes until golden, 2–3 minutes. Discard the garlic and reserve the croutons.

Rub the inside of a large salad bowl with the remaining garlic. Discard the garlic. Tear the lettuce into bite-size pieces, place in the salad bowl and set aside.

Using a vegetable peeler, make Parmesan shavings from half of the cheese. Set aside.

Grate the remaining Parmesan and place in the work bowl of a food processor. Add the mustard, Worcestershire sauce and lemon juice. Process until smooth. With the machine running, slowly add the olive oil and process until the mixture is creamy.

Drizzle the dressing over the lettuce in the salad bowl. Add the salt, pepper, croutons and Parmesan shavings and toss. Serve immediately.
