Colorful Cobb Salad

Ingredients
Serves 8
- 1/2 cup mayonnasie
- 2 tablespoons crumbled blue cheese
- 1 tablespoon vinegar
- 1 teaspoon lemon juice
- 1/2 teaspoon dried dill
- 8 cups torn romaine lettuce
- 4 to 6 slices bacon
- 6 ounces deli chicken breast, cut 1/2 inch thick
- 1 large tomato
- 1 large ripe avocado
Directions

Combine the mayonnaise, blue cheese, vinegar, lemon juice and dill in small jar with tight-fitting lid; shake mixture well. Refrigerate dressing until ready to use.

Wash and dry lettuce; refrigerate until ready to use.

Cook bacon in medium skillet over medium-high heat until crisp. Drain on paper towels.

Fold up paper towels to cover the bacon. Crumble bacon; set aside. Dice chicken and set aside. Seed and slice tomato and avocado; set aside. Place lettuce in large salad bowl. Place chicken pieces in center of lettuce.

Arrange tomato, avocado and bacon in rows on either side of chicken. Remove jar of dressing from refrigerator and shake well to combine.

Pour dressing over salad; toss well. Serve with warm French or Italian rolls, if desired.

grandma's secret
After Grandma washed her salad greens, she always thoroughly dried them before storing. When they were dry, she loosely wrapped them in paper towels and placed them in a resealable plastic food storage bag. She carefully removed all of the air and placed the sealed bag in the crisper drawer of the refrigerator.
