Fresh Herb Tabouli

Grandma's Middle Eastern neighbor taught her how to make tabouli.

Ingredients

Serves 10 

  • 8 cups boiling water
  • 2 cups bulgur
  • 4 medium tomatoes, seeded, chopped
  • 1 1/2 cups chopped fresh parsley
  • 2 bunches green onions, chopped
  • 3/4 cup chopped fresh mint
  • 1/2 cup lemon or lime juice
  • 1/3 cup olive oil
  • 2 teaspoons salt
Directions

    Combine the boiling water and bulgur in a large heatproof bowl.

    Let mixture stand, covered, until bulgur is light and fluffy, about 2 to 3 hours; drain well. Strain bulgur in a cheesecloth-lined colander until dry.

    Combine bulgur, tomatoes, parsley, green onions, mint, lemon juice, olive oil and salt in a large bowl and mix well.

    Chill, covered, for 1 hour or longer. Serve on Bibb lettuce or romaine lettuce.

Grandma's Secret Trick

The Big Boy and beefsteak tomatoes in Grandma's garden were full of seeds. Her easy way of getting the seeds out before using the tomatoes in a salad was to cut the tomatoes around the "equator," then hold the tomato halves over the garbage pail or food disposal and squeezed gently until the seeds came out.
