Ingredients

Serves 8 

  • 1 (3-ounce) package lime-flavored gelatin mix
  • 1 cup boiling water
  • 1 (20-ounce) can crushed pineapple, chilled
  • 8 ounces cottage cheese
  • 1/2 cup chopped celery
  • 1/2 cup chopped walnuts
  • 2 (3-ounce) packages cream cheese, softened
  • 2 teaspoons lemon juice
  • 2 tablespoons mayonnaise-type salad dressing
Directions
  1. 1

    Dissolve gelatin mix in boiling water in a large bowl.

    Add undrained pineapple, cottage cheese, celery and walnuts and mix well. Spoon mixture into a 13 × 9-inch glass dish. Chill, covered, until mixture is set, about 2 1/2 hours.

    Combine cream cheese and lemon juice in a small bowl and mix well.

    Add salad dressing to the cream cheese mixture and mix well. Spread over gelatin. Serve immediately or chill, covered, until serving time.

    Variation: Substitute chopped pistachios for the chopped walnuts.

For the best texture, Grandma used small-curd cottage cheese. She also occasionally used dry-curd cottage cheese, which was equally delicious. And once, she used ricotta cheese, which gave the salad an over-the-top richness.
