Tarragon Chicken Salad

none“On the hottest days of summer, Grandma would purchase cooked chicken from the deli for this salad. ”
Ingredients
Serves 6
- 1 cup mayonnaise
- 1/4 cup sour cream
- 3 tsp. dried tarragon
- 1/2 tsp. salt
- 11/2 lb. cooked, cubed chicken breast (about 4 cups)
- 2 cups grapes
- 2 cups diced celery (about 4 medium stalks)
- 1/2 cup chopped red onion (about 1 medium)
- 1/2 cup cashews
Directions

Combine the mayonnaise, sour cream, tarragon and salt in a large bowl. Stir until the mixture is well blended.

Add the chicken, grapes, celery and red onion to the mixture in the bowl. Stir until combined. Cover bowl with plastic wrap and refrigerate for 1 hour.

Stir the cashews into the chicken salad and serve immediately.
