Very Cherry Salad

Ingredients
Serves 10
- 1 cup water
- 1/3 cup plus 3 tablespoons bottled lemon juice, divided
- 1 (6-ounce) package black cherry gelatin
- 2 (15-ounce) cans pitted dark sweet cherries
- 1/2 cup sherry or water
- 1/2 cup chopped pecans
- 1 cup marshmallow creme
- 1 cup whipping cream
- Leaf lettuce
Directions

Combine water and 1⁄3 cup lemon juice in a small saucepan. Bring to a boil over high heat. Remove from heat. Add gelatin and stir until dissolved. Pour gelatin mixture into a medium bowl.

Drain the cherries, reserving the syrup. Add reserved syrup and the sherry to gelatin mixture and mix well. Chill, covered, until partially set, about 45 minutes.

Brush a 7-cup ring mold with vegetable oil. Fold the cherries and pecans into chilled gelatin mixture. Pour into the prepared mold. Chill, covered, until set, about 1 to 2 hours.

Combine remaining lemon juice and marshmallow creme in a medium bowl. Beat with an electric mixer set at medium speed until blended. Add whipping cream gradually, beating constantly until soft peaks form. Spoon into a small serving bowl. Chill, covered, until serving time.

Line a round serving platter with lettuce leaves. Dip mold in warm water for a few seconds. Invert salad onto prepared serving platter. Place sauce in center of salad.

When Grandma prepared this gelatin to serve as a dessert, she usually omitted the lemon juice. As a substitute, she measured out an equal amount of apple juice, grape juice or cranberry juice.
