Blueberry Dream Fritters

One of my favorite childhood memories was picking blueberries to put into these fritters.

Ingredients

Serves 12 

  • Vegetable oil
  • 1/2 cup whipping cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup self-rising flour
  • 1/3 cup self-rising cornmeal
  • 1/3 cup granulated sugar
  • 1 1/2 cups fresh blueberries
  • Confectioners' sugar
Directions

    Pour 2 inches oil in large heavy skillet and heat to 375°F on deep-fat thermometer.

    Combine whipping cream, egg and vanilla in small bowl.

    Combine flour, cornmeal and granulated sugar in large bowl.

    Stir cream mixture into flour mixture just until moistened. Fold the blueberries into batter.

    Carefully drop 2 to 3 heaping tablespoonfuls of batter at a time into hot oil. Fry until golden brown, turning once, about 3 to 4 minutes. Drain on a baking sheet lined with paper towels. Sprinkle fritters with confectioners' sugar.

    Serve fritters immediately with additional fresh blueberries, if desired, as a tasty breakfast or afternoon snack.

Before buying blueberries, Grandma always checked the bottom of the container to look for unripe, bruised or moldy berries. If the container was cardboard, Grandma made sure it was not stained with juice, which indicated crushed or rotten berries.
