Brown Sugar Oatmeal Peach Loaf

Ingredients

Serves 6 

  • 2 cups all-purpose flour
  • 1 1/4 cups quick-cooking or rolled oats
  • 1 tablespoon baking powder
  • 2 teaspoons cinnamon, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2/3 cup firmly packed light brown sugar
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 can (15-15 1/4-ounce) peaches, drained and chopped
  • 1 tablespoon granulated sugar
Directions

    Preheat oven to 350°F. Lightly spray a 9- x 5-inch loaf pan with nonstick cooking spray.

    Combine the flour, oats, baking powder, 11/2 tsp. cinnamon, the salt and nutmeg in a medium bowl. Mix well. Set aside. Combine the brown sugar, milk, oil and eggs in a large bowl. Mix well.

    Stir the flour mixture into the brown sugar mixture. Stir the peaches into the batter.

    Spread the batter in the prepared pan.

    Combine the granulated sugar and the remaining cinnamon in a small bowl. Mix well. Sprinkle evenly over the batter.

    Bake until a toothpick inserted in the center of the loaf comes out clean, 1 hour–1 hour 15 minutes. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

Grandma's Secret Tip

Fresh or frozen peaches can also be used. One large peach will yield the 1 cup chopped needed to replace the 15-oz.can used in this recipe. Or thaw and chop 1 cup frozen peaches.
