Carrot Bread

Ingredients

Serves 12 

  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts
Directions

    Preheat the oven to 350ºF. Grease and lightly flour a 9 × 5-inch loaf pan.

    Combine granulated sugar, vegetable oil and eggs in a large bowl and mix well.

    Sift flour, baking soda, cinnamon and salt into a medium bowl. Add to sugar mixture and mix well.

    Add carrots and walnuts to flour mixture and mix well. Spoon into prepared loaf pan.

    Bake bread until a toothpick inserted in the center of the loaf comes out clean, about 1 hour. Cool in the pan for 10 minutes. Transfer loaf to a wire rack to cool completely.

Grandma's Secret Tip

For lunch or a snack, Grandma made us "ant sandwiches." She spread peanut butter on a slice of carrot bread, then arranged raisins on top of the peanut butter for the "ants." Since the grown-ups turned up their noses at our "ant sandwiches," we naturally loved them all the more.
