Friday Night Pizza

16 minutes“Friday night was always pizza night at Grandma's house. Pre-cooking the crust on the stovetop gives this pizza a crisp but chewy texture. ”
Ingredients
Serves 4
- 2 tablespoons olive oil
- 1 (10-ounce) can refrigerated pizza dough
- 1 clove garlic, minced
- 8 ounces shredded mozzarella cheese
- 6 slices Canadian bacon
- 1/2 green bell pepper, cut into rings
- 1/3 cup onion, coarsely chopped
- 2 tablespoons sliced black olives
- 1 tomato, sliced
- 2 teaspoons chopped fresh oregano

Preheat oven to 400°F.

Heat the olive oil in a 12-inch ovenproof skillet over medium-low heat. Unroll the pizza dough and place in the hot oil. Cook 2–3 minutes per side, or until golden brown.

Layer with the garlic, half the mozzarella, the Canadian bacon, bell pepper, onion, olives, tomato, oregano and the remaining mozzarella.

Bake in the oven for 10 minutes. Serve immediately.

Variation Idea
To make foccacia bread, roll out the pizza dough on an oiled baking sheet. Poke holes in it with a fork & spread with olive oil & garlic. Omit bacon. Top with the onion, bell pepper & tomato. Bake until brown, about 20 minutes. Sprinkle with oregano, mozzarella & olives. Return to the oven until cheese melts.

Use whole-wheat pizza dough & omit the cheese & bacon. Top with some tomato sauce & the fresh vegetables instead.
