Iced Flower Coffee Ring

Ingredients

Serves 10 

  • FOR THE COFFEE RING
  • 1 package active dry yeast
  • 1/4 cup warm water
  • 1/2 cup milk, scalded
  • 4 tablespoons (1/2 stick) butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 3 1/2 cups sifted all-purpose flour
  • 2 eggs, lightly beaten
  • 1/2 cup peach jam
  • FOR THE GLAZE
  • 1 cup sifted confectioner's sugar
  • 1 1/2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • SPECIAL AID
  • 1 drinking glass

    Making the Coffee Ring: Grease a large baking sheet. Combine yeast with warm water. In another bowl, combine milk, butter, sugar, cinnamon and salt; cool slightly. Beat in flour, yeast mixture and eggs.

    Knead dough until smooth, about 8-10 minutes. Cover and let rise in warm place until doubled, about 1 hour.

    On a floured surface, roll out dough to a 14-inch circle. Place on prepared baking sheet. Place a drinking glass in center. Cut dough into 4 large sections and cut each section into 5 strips.

    Remove the glass. Gather 2 strips and twist together; continue around circle.

    Coil one of the twisted ends and roll up to the center of the ring.

    Continue with remaining twists and gather loosely around center to form additional flower buns. Let dough rise again until doubled.

    Preheat oven to 350°F. Bake coffee ring until golden, about 25 minutes. Transfer sheet to a wire rack. Spoon peach jam evenly into center of each bun. Cool completely.

    Making the Glaze: While coffee ring is cooling, prepare glaze. In a small bowl, combine confectioners’ sugar, milk and vanilla. Drizzle glaze over cooled cake.

Variation

Instead of forming the flower buns, simply divide the dough into 10 pieces, roll into balls, place in a 10-inch cake pan and proceed as recipe directs. For a different flavor, add 1⁄2 teaspoon of almond or orange extract to the icing.
