Lots o' Chocolate Bread

Ingredients

Serves 24 

  • 2/3 cup firmly packed light brown sugar
  • 8 tablespoons (1 stick) butter, softened
  • 2 cups mini semisweet chocolate chips, divided
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups applesauce
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable shortening (do not use butter, margarine or oil)
Directions

    Preheat oven to 350°F. Lightly grease 5 (51/2 x 3-inch) mini loaf pans.

    Beat brown sugar and butter in a large bowl until creamy. Melt 1 cup chocolate chips; cool slightly. Add the melted chocolate chips and eggs to the sugar mixture. Stir in the flour, applesauce, vanilla, baking soda, baking powder and salt; beat until well blended. Stir in 1/2 cup chocolate chips.

    Spoon batter into the prepared pans; bake until center crack of each loaf is dry to the touch, about 35 to 40 minutes. Cool for 10 minutes before removing from pans to wire racks.

    Place remaining 1/2 cup chocolate chips and shortening in a small microwavable bowl. Microwave on HIGH 1 minute; stir. If necessary, microwave on HIGH an additional 15 seconds at a time, stirring after each heating, until melted. Drizzle warm loaves with chocolate glaze. Cool completely.
